The Raw Trader- Chia Acai Pudding and Almond Milk Latte

In the reticulate laneways of Melbourne CBD lies a little nook of raw food oasis. Aptly named The Raw Trader, the cafe brings the harvest of mother nature's work, organic and unprocessed, to Melbourne's 4million.

The concept of raw food is not that new to Australia but it is rarely explored. Technically, raw food are prepared within the temperature limit of 40C. It is believed that food retain its nutrients (vitamins,healthy fats and proteins) and are more bioavailable when it is untempered by heat.

For many, raw food conjures the image of salads. For Emily, the owner and recipe developer at the Raw Trader, however, raw food is a medium for her to recreate classic desserts, like cherry ripe, mint slices and tiramisu. Only this time, you'll see these timeless favorites in its organic, raw, vegan, vegetarian, paleo, gluten free, dairy free and sugar free form. Impressed?!?

At the time of my visit, there were 8 varieties of bliss balls, 10 sorts of biscuits, small cakes and donuts, 34 different cakes, slices and tarts, 7 types of chocolate barks and fudge bars and 8 flavours ofice cream and sorbets on trade. Caramel slices, peppermint bars, almond snickers, opera cake, white chocolate and salted caramel cheesecake and raw mella royals- I wanted it all. To my amazement, Emily had let me know that half the display cabinet rotates, so when I return, I would be sure to find new and curious desserts to delight me.

All the desserts are created on the premise from scratch. Emily works her magic-soaking, chopping, blending and layering ingredients-sometimes taking up to 2 to 3 days to construct a delicate cake. "It's part of the challenge and you never stop learning and experimenting," says Emily. Last year, Emily traveled from the east to west coast of America observing and learning raw vegan food trends to bring to Australia. With that kind of passion, you can trust that her original raw desserts have pure flavor and delicious profiles.

Twentysixteen marks an eventful year for The Raw Trader. Emily has plans for raw food cooking demo classes, dessert degustation night and words are in place for Raw Traders Cookbook. There is expansion on the retail products- you can take home gift packs of granola, roasted nuts, raw cheeses and special occasion cakes for weddings, birthdays and parties.
