Gluten free and Dairy free Raspberry Mugffin

Mugffin, a portmanteau of the words mug and muffin. Makes sense right? Though a quick search on google shows zero results for the word. I think...I juuusst might have invented the word and would be the first to apply it culinarily! 

Wowie. That's pretty awesome!!!


I was inspired by the idea of mug-cakes, which you might have heard are cakes cooked by microwaving.


The concept of a mugffin is similar. Ingredients are portioned for individual servings, so you don't have the hassle of batch baking. It is easily assembled under 5 minutes and cooked by microwave for a further 3 minutes. It makes for an easy treat for one or two people.


I especially like these mugffins for breakfast because the ingredients involved are on the healthy side.

With the use of wholegrain buckwheat flour and protein powder, these mugffins are rich in fibre and protein. In lieu of sugar, I opted for a low-sugar soymilk, fruits and honey to sweeten the mugffins. 

Further, I skipped the fat. There is no oil or butter in this recipe!




These mugffins are gluten free, dairy free, soft and fluffy. From start to finish, it takes less than 10 minutes to make and cook. It is truly the easiest thing to make since avocado chocolate mousse!

Superfood High Protein Raspberry Mugffin by NellyBelly

Ingredients
½ cup buckwheat flour
1 scoop 180 Nutrition Superfood Protein (Vegan Coconut)
½ teaspoon baking powder
Pinch of salt
1 egg
1 cup soy milk- light or low sugar
2 tablespoons honey
Handful of frozen raspberries

Directions
1.       In a large bowl, mix well buckwheat flour, Superfood Protein, baking powder and salt
2.       In a smaller bowl, whisk egg, honey and soy milk until well blended
3.   Combine wet to dry ingredients. Mix well. Add raspberries
4.   Portion batter into two mugs**; filling it 80% to the top. Microwave for 3-3.5 minutes. Leave in mug for 1 minute then turn out onto cooling rack to cool.

Makes 2 Mugffins

*I use two 220ml short and stout microwavable mugs

Notes + Inspiration
Swap out buckwheat flour for oat flour! To make oat flour, put oats in a blender or spice grinder and mill until fine flour forms.
Use maple syrup instead of honey
Try adding different fruits and nuts for a variety of mugffins
