Paleo High Protein Chocolate Donuts

The recipe is adapted from Ashley As a Wholefood Advocate and Editor of the FeedFeed, Ashley's approach to recipe development is to see food as nourishment. She endeavors to pack healthy ingredients into her recipes, all the while eliminating the bad ones. The secret to these donuts is its unique vegan protein content, 180 Nutrition Superfood Protein in Vegan Chocolate. 180 Nutrition's vegan protein formula groups pea protein isolate with heaps of superfood, such as coconut flour, chia seeds, flaxseeds and almond meal. A scoop of the protein powder gives you a whopping 21 grams of clean protein. For the donuts, I used 1/2 cup of protein powder.

Paleo High Protein Chocolate Donuts by NellyBelly

1 1/4 cup almond meal
1/2 cup 180 Nutrition Superfood Protein (Vegan Chocolate)
1/2 cup tapioca flour
2 tablespoons cocoa powder
1 1/2 teaspoon baking soda
3 tablespoons coconut sugar
pinch of salt
3 large ripe bananas (~350g)
1/2 teaspoons instant dried coffee
3 tablespoons coconut oil
3 free range eggs

1. Preheat oven 175C. Lightly grease donut pan.
2. In a large bowl, mix well the first 7 dry ingredients.
3. In a separate bowl, mash up bananas. Using a hand mixer, further puree the mash bananas and add instant dried coffee. Mix until dissolved.
4. Slightly melt coconut oil in microwave until soft. Add to banana mixture. Mix well.
5. Lightly beat eggs and add to banana mixture.
6. Mix wet ingredients to the dry until batter is smooth and well-mixed.
7. Measure 1/4 cup of batter per each donut. Bake for 12 minutes or until the donut springs back to the touch.

Makes 15 donuts

Notes + Insipration
Eat as a naked donut for the healthiest version
PB topped with cocoa nibs
Make a healthy glaze with two tablespoons of mashed banana mixed in tablespoon of cocoa powder or a dash of ground cinnamon.
